Recipe #3 – A Tomato Tart

I’ve debated on whether or not to post this recipe.  You’ll recall I’m working through 10 recipes in the 101 Homestyle Favorites recipe book from Gooseberry Patch.  And my first two recipes were really good.  But I didn’t have as much luck with this one.
First you need to dice 4 tomatoes.

Then you will combine 1/2 cup mayonnaise, 1 cup each of shredded Cheddar and Colby Jack cheeses, one tablespoon of chives and one tablespoon of dried basil.
Pour it into an unbaked pie crust.

Then bake at 400 degrees for 20-30 minutes or until browned a bit on top.

My husband loved this.  The kids liked it.  It just didn’t hit the spot with me.  I’m wondering if a bit more cheese and tomatoes and a bit less mayo would have helped me like it more?  But it was popular with the family!

  1. Just proves that taste is subjective, right? At least the family enjoyed it. You can always make it for the hubby when you won’t be there for dinner. 🙂
