Recipe #7 – Comfort Food

I’m getting towards the end of my recipes from the 101 Homestyle Favorites from the Gooseberry Patch.  The weather has been a bit cooler in the midwest and I’ve been craving comfort food.  When looking for a recipe, I search out stick to your ribs, cheesy goodness.  And I found it in this recipe.
The recipe is:
2 Tbsp chopped onion
1/4 cup butter
1/4 cup flour
1/2 tsp. dry mustard
1 tsp. salt
dash of pepper
1 1/2 cup milk
2 cups shredded Cheddar cheese, divided
6 cups potatoes, peeled, cooked adn sliced
1/2 lb. cooked ham, diced
Start by peeling your potatoes.  I never have any idea how many potatoes it takes to make a cup.  So I usually guess two potatoes makes one cup of chopped up end product.
In a skillet, saute the chopped up onion in butter.  Blend in flour, mustard, salt and pepper. 

Gradually add milk, stirring constantly until thickened.  Mix in 1 1/2 cups cheese and stir until melted.

Remove from heat.  Add the potatoes and toss until coated.  Spoon into a greased 9×13 dish.  Arrange ham and remaining cheese on top.

Bake uncovered at 350 degrees for 30 minutes until hot and bubble.
You will love this.  Your kids will love this!  And it’s a one pot meal.  Easy clean up!!
